Like Cognac, the best Calvados is double distilled in similar alembic stills and aged in oak for two years.
The spirit can be made out of 200 different apple varieties. The apples are fermented into a dry cider.
It is then distilled into an Eau-de-vie. Finally, the spirit is aged in the oak barrels and will be bottled as Calvados.
