What is Mezcal?
Mezcal is also known as the close cousin of tequila, the main similarity being that both spirits are agave-based. There are however several key differences between these two spirits.
Mezcal can be made from different types of agave such as tepeztate, tobalá, tobaziche, arroqueño and espadín. Whereas, Tequila is always made from blue agave.
Another difference between Mezcal and Tequila lies within the production process. For Mezcal, the core of the agave plant is harvested, cooked in an underground pit lined with aromatic items like charcoal, wood and volcanic rock. This results in a different flavour profile. For producing tequila, these aromatic ingredients are not used.
Mezcal comes from different regions in Mexico and is available in a variety of classifications. There are joven, reposado and añejo varieties, these correspond with the length of the spirit’s ageing period. Respectively, from shortest to longest period of ageing.
