Aquavit its origin comes from Norway. Christopher Blix Hammer, a civil servant who also worked at the University of Copenhagen as a botanist during the 17th century wrote cookbooks and consulted farmers.
This written advice also contained instructions on how to distil and flavour spirits with herbs from their own land. Aquavit is made in a similar way as a lot of grain spirits.
It can be distilled in a copper still and also in a column still. Aquavit has a very distinct flavour and aroma.
It's flavoured with herbs and spices from the local area.
